There are now also small (boutique) manufacturers to position themselves in the market &#8211; just like Pascal Doquet.<\/em><\/span><\/p>\n<\/div>\n<h3 id=\"yui_3_16_0_ym19_1_1465637103285_23285\" style=\"text-align: justify;\"><span style=\"font-family: 'book antiqua', palatino, serif; font-size: 18px;\">Das Weingut und der Winzer Pascal Doquet\u00a0\u00a0<\/span><\/h3>\n<div id=\"yui_3_16_0_ym19_1_1465637103285_23285\" dir=\"ltr\" style=\"text-align: justify;\"><span style=\"font-size: 18px; font-family: 'book antiqua', palatino, serif;\">Seit 1982 sammelt Pascal Doquet Erfahrung in der Weinherstellung und er \u00fcbernahm 1995 das Familienweingut.\u00a0Heute ist er Eigent\u00fcmer von 13 ha bester Champagner Lagen an der C\u00f4te de Blancs. Er baut \u00fcberwiegend Chardonnay und nur etwas Pinot Noir an.\u00a0Seine Parzellen sind in unterschiedlichen Lagen mit verschiedenen B\u00f6den. In der C\u00f4te des Blancs stehen Ihm rund 5 Hektar zu Verf\u00fcgung &#8211; 1.67 Hektar (auf sehr kreidigen B\u00f6den) in den Grand Cru Lagen von Mesnil-sur Ogier &#8211; \u00fcber 2 Hektar (tiefere B\u00f6den mit hohem Lehm Anteil) in Vertus und Berg\u00e8res-les Vertus &#8211; 1.2 Hektar auf Le Mont Aim\u00e9 (gelbe Kreide, Feuerstein und Sand) und etwa 3.5 Hektar auf grauem Lehm und Kreide in Bassuet und Bassu.<\/span><\/div>\n<div dir=\"ltr\"><\/div>\n<h3 dir=\"ltr\"><em><span style=\"font-family: 'book antiqua', palatino, serif;\">The vineyard and winemaker Pascal Doquet\u00a0<\/span><\/em><\/h3>\n<div dir=\"ltr\" style=\"text-align: justify;\">\n<p><span style=\"color: #333333; font-family: 'book antiqua', palatino, serif; font-size: 18px;\"><em>Since 1982 Pascal Doquet accumulated experience in winemaking and he took over the family winery in 1995. Today he is the owner of 13 ha best champagne vineyards on the C\u00f4te de Blancs where he cultivates primarily Chardonnay and a little Pinot Noir. His plots are in different positions with different soils. In the C\u00f4te des Blancs there are approximately 5 hectares available &#8211; 1.67 hectares (on very chalky soils) in the Grand Cru of Mesnil-sur Ogier &#8211; over 2 hectares (deeper soils with high clay content) in Vertus and Bergeres-les Vertus &#8211; 1.2 hectares on Le Mont Aim\u00e9 (yellow chalk, flint and sand) and about 3.5 hectares on gray clay and chalk in Bassuet and Bassu.<\/em><\/span><\/p>\n<h3><span style=\"font-family: 'book antiqua', palatino, serif;\">Was macht den Winzer besonders ?\u00a0<\/span><\/h3>\n<\/div>\n<div id=\"yui_3_16_0_ym19_1_1465637103285_23285\" dir=\"ltr\" style=\"text-align: justify;\"><span style=\"font-size: 18px; font-family: 'book antiqua', palatino, serif;\">In den vergangenen Jahren stellte er systematisch auf nachhaltigen Weinbau um. Seit 2001 ohne chemische Herbizide und seit 2004 arbeitet er rein organisch. Zitat Pascal Doquet: &#8222;Durch den organischen Anbau erhalten die Weine Harmonie und L\u00e4nge.&#8220;\u00a0Seit 2004 reifen die Weine in F\u00e4ssern &#8211; 1\/3 davon Eichenf\u00e4ssern. <\/span><\/div>\n<div dir=\"ltr\"><\/div>\n<div dir=\"ltr\" style=\"text-align: justify;\"><span style=\"font-size: 18px; font-family: 'book antiqua', palatino, serif;\">Die Weine werden weder gesch\u00f6nt noch kaltmarzeriert bevor Sie abgef\u00fcllt werden. Der Vintage Le Mesnil und Le Mont Aim\u00e9 reifen min sieben Jahre oder l\u00e4nger.<\/span><\/div>\n<div dir=\"ltr\"><\/div>\n<h3 dir=\"ltr\"><em><span style=\"font-family: 'book antiqua', palatino, serif;\">What makes the winemaker so special ?\u00a0<\/span><\/em><\/h3>\n<div dir=\"ltr\" style=\"text-align: justify;\">\n<p><span style=\"color: #333333; font-size: 18px; font-family: 'book antiqua', palatino, serif;\"><em>In recent years, he changed systematically to sustainable viticulture. Since 2001 chemical herbicides have been banned and since 2004 he has been working purely organic. Quote Pascal Doquet: &#8222;Due to the organic cultivation the wines receive harmony and length.&#8220; Since 2004 the wines are cask-conditioned and mature in barrels &#8211; 1\/3 of them of oak. <\/em><\/span><\/p>\n<p><span style=\"color: #333333; font-size: 18px; font-family: 'book antiqua', palatino, serif;\"><em>The wines are neither fined nor kaltmarzeriert before they are bottled. (Only slightly filtered). Compared to other winegrowers the wines of Pascal Doquet mature long on the yeasts\u00a0 after the second fermentation. The &#8222;simple&#8220; Blanc de Blancs is e.g. released only after three years.
